BBQ Shrimp with Corn Relish
Your non-meat eating guests will LOVE you for making this sassy shrimp appetizer.
Ingredients
1/2 lb peeled and deveined shrimp 1/4 cup BBQ spice or rub 4 Tbs butter 1 15.5oz can corn, drained 1/4 cup sweet relish 1/4 cup roasted red peppers, diced 1 sprig cilantro, chopped 2 scallions, chopped 2 Tbs honey 1/4 cup red onion, chopped Ohter ingredients: 1 bag corn tortilla chips 1 lime, cut in wedgesDirections
- Toss shrimp in BBQ spice until well coated.
- Melt butter in a large sauté pan over medium-high heat.
- Once butter has melted, add shrimp and sauté 5 minutes or until cooked.
- Add remaining ingredients and continue to cook 3-4 minutes while constantly stirring.
- Serve warm with tortilla chips and lime wedges on the side.
