Rack of Chiappetti Lamb with Mustard Crust
Ingredients
- 1 rack Chiappetti lamb
- 3 teaspoons of olive oil
- ¼ cup Dijon mustard
- ½ cup chardonnay
- ¼ cup bread crumbs
- 1 ounce shallots (peeled and chopped)
- ¼ cup tomatoes (chopped)
- 1 sprig thyme
- 1 cup lamb stock
Directions
- Sear the lamb in a hot skillet with olive oil.
- In bowl, mix ¼ cup chardonnay and Dijon mustard.
- Baste lamb with mixture and roll in bread crumbs.
- Preheat oven to 400 degrees for 15 minutes. Set lamb in roasting pan and cook for 25 minutes, let set for 5 minutes before serving.
- In a separate pan, saute shallots and tomatoes until caramelized.
- Add ¼ cup wine and thyme. Reduce until almost dry. Add lamb stock and simmer until liquid is a thick consistency.
- Slice lamb and serve with sauce.
