Sepia's Pickled Fennel
Ingredients
Pickling liquid
- 1 cup champagne vinegar
- 1/2 cup sugar
- 1 cinnamon stick
- 6 black pepper corns
- 1 piece star anise
- 6 coriander seeds
- 1 fennel bulb, very thinly sliced
Directions
- Combine all the pickling liquid ingredients in a small saucepan and bring to a boil. Reduce the heat to a simmer and cook 20 minutes. Strain and let cool slightly.
- Pour the warm pickling liquid over the sliced fennel and let it come to room temperature. Cover and refrigerate overnight.
